At 15 years old I spent a weekend working in the kitchen at a beautiful boutique hotel in the Scottish highlands called Monachyle Mhor, after that I knew this was the career I wanted to have. I left school six months later and started my apprenticeship at the Old Course Hotel Golf Resort and Spa on the east coast of Scotland leaving home in the process.
After a year I returned home for 6 months before moving to Edinburgh and the Balmoral hotel where I specialised more in the pastry kitchen.
After 2 and half successful years I moved to the amazing Prestonfield House Hotel where I improved my pastry skills even further and learned a great deal working in a 2 rosette restaurant . I was inspired to come to Portugal by Portuguese friends and work colleagues and there stories of home. With no knowledge of Portuguese cuisine I got off the plane with nothing to loose and everything to learn. Over the next 18 months I tried to learn as much as I could and have learned so much without even scratching the surface of this very diverse culinary destination.
A place more chefs should be shouting about! All the inspiration needed here is what is all around you, everywhere you look there is some of the best produce you will find anywhere. Here I combine everything I have learned in my 7 years as a chef with the Alentejo larder and we hope to give you a memorable culinary experience.
